In the middle of summer, when the plum and lime tree are harvested, we do wonders with these 2 products.
Here is the delicious recipe for lime plum jam.
Ingredients for 4 jars :
- 1.5 kg of mirabelles
- 600 g sugar
- 2 untreated lemons
- 1 handful of Carpentras lime leaves.

> Wash the mirabelles. Stem them, open them in half without detaching them to pit them.
> Squeeze the juice from the lemons.
> Prepare an infusion with the lime blossom and 25 cl of boiling water, filter it through cheesecloth.
> Pour the sugar, lemon juice and the infusion into a jam basin. Bring to a boil, stirring with a spatula, simmer until syrupy (about 10 min).
> Add the mirabelle plums and cook for 10 min. Remove from heat, pour into a bowl and let macerate for 12 hours.
> Cook for another 10 minutes in the jam bowl. Check the doneness by pouring a few drops on a cold sloping plate: the jam should set.
> Place in scalded and dried jars. Cover while hot.
