Jerusalem artichoke, for the record

Considered post-war as a ration food, the Jerusalem artichoke has long been a forgotten part of our diet. Reconsidered for its virtues and taste, it has now found an honorable place in kitchens. Low in calories and rich in vitamins and minerals, it is a fine vegetable with a flavor reminiscent of artichoke. To digest it better, add a pinch of baking soda to its cooking water.

If Jerusalem artichoke does well in your garden, it will settle there for the long term. Think about it before you plant it! It is easy to grow and, although it prefers drained land, it tolerates all soils. It can grow up to three meters in height like the sunflower, of which it is the cousin. Install it at the end of the plantation to enjoy an effective and decorative autumn windbreak thanks to its yellow flowers!

Easy to grow

Plant your tubers at the end of winter. If you haven't prepared the soil in the fall, dig it up after a good rain. Drive the tubers about 10 cm deep, every 50 cm.

Leave 80 cm between the rows. Stretch a wire between two stakes to keep this vegetative hedge straight. That's all, the plant will grow on its own.

Conservation in the garden

When winter comes, leave the tubers of your Jerusalem artichokes in place. This is the best way to store this quickly wilting vegetable in the open.

If you want to consume it during very cold periods, tear off several feet. Remove the soil, and put the tubers to soak, stirring them so that they rub together to clean them without having to brush them. Let them dry, then store them in a closed container to be placed in a frost-free room: they will stay fresh for 3 to 6 weeks. Repeat the operation as and when you need it.

If you plan to grow them again the following year, keep a few tubers: you will replant them at the end of winter ... or they will grow back on their own, because there are always a few rhizomes left in the ground!
